We booked our two days/one night tour with one of the major vendors, Delta Aventures, two days before the trip started. The tour was cheap, only 25 dollars per person, including transport and hotel. I've read a lot of negative comments about at tripadvisor and other portals, but our trip was very fine.
For sure, it is not a VIP-tour, room condition was poor but clean and you are one of many. But our tourguide was excellent and besides the famous trips on the river and some side arms we visited a lot of local business like beekeepers, a rice factory, rice wine destillery and many more. We also saw two floating markets and our guide always gave us interesting background information, everything was well organised. So we spent an interesting time in the delta I don't want to miss.
Some of our fellow traveller added a night with "home stay" - according to the informations you get in booking offices in Saigon, it is possible to stay one night in a private home to have contact with local people. I am not sure if there isn't a language problem, as far as I've heard. Others take a trip upstream to Cambodia: this s a bit time intense, but must be a fantastic voyage.
